A good pasta dish should be two things; simple and delicious. The beauty is in the ability to whip up something scrumptious in the matter of minutes, and this romanesco pasta does just that. The recipe is a take on the traditional pasta with broccoli subbing the broccoli for her remarkable cousin, the romanesco. As with all things Italian cooking, to get the most out of this dish use the best quality ingredients (olive oil, parmesan, pasta) you can get your hands on. You can omit the anchovies and chilli flakes if they don’t tickle your fancy, you will still be left with a delicious end product.
