This thai pumpkin soup is a real winter warmer and so quick and easy to prepare for a mid-week meal. To go the extra mile try whipping up a batch of your very own red curry paste to maximise the flavour of this dish; you can freeze a large batch and use it for another round of this soup or for a meat based red curry.
